The story...
Brazil is the world’s largest producer of coffee with the state of Minas Gerais being the powerhouse of the speciality coffee market. Minas Gerais is a special place to cultivate coffee due to the perfect combination of climate, rich volcanic soil and the expertise of the coffee farmers themselves.
This coffee is a culmination of the hard work of many smallholders whose farms sit within the Poços de Caldas, a caldera which was created from the eruption of an ancient super volcano. After harvesting the ripe cherries are gathered and processed using the traditional natural method, favoured and perfected in Brazil over centuries. Great care has been taken from cultivation to processing, resulting a sweet and uniquely fruity cup with a clean acidity.
Additionally, careful consideration has been given to the method of decaffeination of this coffee. The use of a natural and gentle carbon dioxide/water decaffeination process ensures the complex flavour profile stays intact whilst removing over 99.9% caffeine from the beans.
