The story...
Finca San Cayetano is owned and operated by Natchez S.A., third-generation coffee producers. Spanning 92 hectares, the farm benefits from nutrient-rich volcanic soils and a warm tropical microclimate tempered by cool mountain air and Atlantic currents, creating ideal conditions for producing exceptional speciality grade coffee.
To foster a resilient micro-ecosystem and encourage biodiversity, the estate intercrops banana plants among the coffee trees. These provide vital windbreaks and natural shade, slowing cherry maturation and allowing the fruit to develop greater sweetness. Finca San Cayetano also tends active beehives to encourage cross-pollination throughout the coffee fields, with the added benefit of producing fresh honey for sale within the local community.
After harvest, the ripe cherries are processed at the on-site wet mill, with this lot carefully selected for decaffeination. A gentle, natural carbon dioxide and water process preserves the coffee’s complex flavour profile while removing more than 99.9% of the caffeine from the beans.
